What is “qursan” (قرصان), the Saudi dish?
قرصان — pronounced gurṣān in Saudi Arabia, where ق often becomes g — is one of Najd’s signature dishes: rounds of paper-thin whole-wheat bread stacked in layers, moistened with meat broth, and topped with vegetables. On the page it’s spelled exactly like قُرصان, “pirate,” so menus full of qursan sometimes startle learners. The dish, especially beloved in the Qassim region, has nothing to do with the high seas.
The cook in the clip builds it layer by layer — الطبقة الأولى، الطبقة الثانية (“the first layer, the second layer”) — giving each one a رشة مرق, a drizzle of broth, plus local clarified butter, السمن البلدي. That word بلدي (“of the land”) is worth stealing too: it marks anything local and traditional, from بيض بلدي (free-range eggs) to خبز بلدي (traditional bread). She closes with the verdict أفخم وجبة عندي — “the most luxurious meal I know.”
