What does “العصيد” (al-aseed) mean in Arabic?
العصيد (al-aseed) is a thick, dome-shaped porridge made by kneading wheat flour into boiling water or broth until it sets solid. It is then inverted into a bowl and drenched in مرق — a meat or chicken broth. One of the oldest continuously prepared dishes in the Arab world, aseed is eaten communally by hand from a single shared bowl, making the word as much a social act as a food.
The name comes from the Arabic root عصد, meaning “to twist” or “to knead,” describing the vigorous stirring that gives the porridge its dense, smooth texture.
